Neonatal fat has an increased ratio of saturated to unsaturated fatty acids, which results in higher melting and solidification points for stored fat. This, plus other possible metabolic defects, leads to crystal formation, fat necrosis, and inflammation when the fat is subjected to stresses such as ischemia or trauma. |
